Tropical Chicken Salad
Ingredients (4 servings)
- 2 tablespoons olive oil
- 16 oz chicken breast pounded and pan seared and diced
- 8 cups mixed greens
- 12 oz Caribbean Sweet pineapple, diced
- 12 oz cantaloupe, diced
- 8 oz papaya, diced
- 1 avocado for garnish
- Mustard dressing (recipe below)
Preparation:
- In a heavy skillet warm olive oil and sear the chicken breasts
- Let it stand to cool
- Divide mixed greens in 4 individual salad bowls
- Place all diced fruits in a large mixing bowl
- Place diced chicken
- Add dressing, and mix
- Place above mixture over the mixed greens
- Garnish with avocado
Mustard Dressing
- 2 teaspoons olive oil
- 1 teaspoon minced garlic
- 4 tablespoons red wine vinegar
- 16 tablespoons olive oil
- Salt and pepper
- Mix in a blender
- Adjust to taste
